Steak & potatoes

Vegan Steak!

We all know how terrible red meat is for our health..
A nastycarcinogen (cancer causing) high in saturated fat
(the leading cause of heart disease) ..

I never thought I would be "vegan" but the mental and physical health benefits had me hooked within 2 weeks and I never went back. This steak is unreal - packed with flavor AND health! Feel free to eat 5 of these steaks with zero guilt / health defects! 

Ingredients: 
  • 2 Portobello Mushrooms 
  • 1/4 cup Tamara or soy sauce - we use the lower sodium
  • 1/4 cup vegetable broth
  • 1 tsp liquid smoke
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp thyme - can omit but if you have it!
  • PS: feel free to double or triple the recipe for more guests! 

Instructions: 
  1. De-stem the mushrooms and scoop out the insides - I think you can leave them in if you want .. but I took them out (idk lol) 
  2. In a Tupperware or shallow dish etc combine all ingredients and whisk until combined. 
  3. Add in the mushroom caps and flip them back and forth to cover them. Use a spoon to pour the marinade inside the cap! 
  4. Let sit for at least 30 minute but several hours would be great! 
  5. Heat a grill or large skillet over medium heat - or medium high depending on how powerful your stove is! Use a good non stick pan if possible. 
  6. Add the mushrooms and cook on both sides for 4-5 min .. until they are soft through and golden brown. Feel free to add additional marinade to help not stick / seal in the flavor! 
  7. Serve with healthy, fluffy mashed potatoes and gravy - found in my Earth to Mouth E-book! Maybe some veg on the side, too ;)

What if you don't have or want to use liquid smoke? What else could I use?

You could leave it out or use smoked paprika!! Make sure it is smoked :)
