This spicy chickpea mix can be popped on top of a salad, eaten as a side dish or put between two wholesome slices of bread and eaten as a sandwich!
It was a hit with my entire family (the vegans and the NON vegans!)
My momma used to make cranberry scones with a delicious orange/vanilla thick spread and they were always SO good! I figured I would give scones a go but try for a healthier version - completely vegan and using no refined products!
You can spread some vegan butter or jam (or both) on these! The flavors are interchangeable - so you can omit the cranberries and add in other types of fruits/flavors to make them to your liking!
I was VERY skeptical of this recipe and had to play around a bit to make sure it "held together" (adding in the oats/flax was key!) But it is officially one of Damon's and my Step-Dad's favorites! + it is so easy and as always, very cheap!!

Such simple ingredients and yet they remind him of the brownies his mom made for him as a kid! Just without the butter, eggs, milk etc!
I have made this before and eaten it as a topping for banana whip - like choco chip cookie dough ice cream.. it is great as a snack or topping for oats, banana whip etc!
Ok, this was SO easy, so simple and SO HEARTY/DELICIOUS!
Have this for any meal of the day and make lots of extra and store it in the fridge for desserts/breakfasts/meals/snacks for days!!
Alright, another Holiday = more stress with family on WHAT to eat and how not to make a fool of yourself in front of non vegans .. aka being prepared. I am going to post a recipe for Vegan Irish Stew (I don't have a photo yet since I haven't made it since my step-dad's bday party and I never took a photo!) .. but I should have some pics hopefully after the holiday or maybe even a full recipe video! Just know - it is delicious! And so easy since you make it in a big pot!
My pops asked for lunch today (he is 7 months plant based vegan!!!) - so I made him some crispy potatoes and "CINNAMON APPLE PANCAKE BREAD" - that is what I am calling it at least! It is almost the same batter recipe as the pancakes from my ebook but baked in the oven in a glass loaf dish!
This week I made the most delicious and simple CHEESY POTATO SOUP!
I added in steamed broccoli to this as well and omg it is PERFECT.
