Sometimes a tiny mug cake just won't cut it.. Moist, satiating, wholesome and healthy - this recipe can be shared as dessert, 1/2 the recipe for a snack or eat the whole thing as a wholesome sweet meal!
1 cup whole wheat flour (can try other flours like oat flour, buckwheat, teff flour etc but I haven't tried it with those yet!)
1 tsp baking powder
1 tsp vanilla
1-2 tbsp peanut butter or nut butter of choice
1 cup plant milk
Sweetener to taste - I used two TBSP raw sugar! Use agave, maple syrup or whatever you want!
add ins - choose whatever flavors, spices, add ins you desire! I added cinnamon to mine!
Mix everything together in a microwave safe dish.
I did 1/2 the batter in two small bowls (wanted to test the recipe first before making the whole recipe!)
Microwave for roughly 2 min (if halved) or probably 3-3.5 minutes for the whole thing depending on microwave.
Top with warmed sliced apples and a I drizzled a sauce of peanut butter, almond milk and raw sugar + cinnamon over top! Have a glass of plant milk on the side :)
