Maple/Cinnamon Apple Quinoa
Ok, this was SO easy, so simple and
Have this for any meal of the day and make lots of extra and store it in the fridge for desserts/breakfasts/meals/snacks for days!!
You will need:
Quinoa - I would say use about 2 cups dry (yields about 6 cups cooked) and for a solid meal I would use about 2 cups cooked!
Vanilla/Cinnamon or Apple Pie Spice
Almond milk or other plant milk
Toppings: Dried cranberries, raisins, dates, maple syrup, nuts, nut butter etc. Basically whatever you want!
Cook quinoa with 1/2 plant milk and 1/2 water + vanilla and cinnamon.
Toss diced apples + water or some maple syrup + cinnamon in a pan and steam/fry them up till soft.
Place 1-2 cups quinoa in your bowl - add apples on top + any other toppings of choice and I like to drizzle some plant milk over top as well!
