FUDGE CAKE

This will knock your socks off!
A simple recipe that is: oil free, gluten free (options), refined sugar free, egg/dairy free ..
​entirely vegan and PLANT BASED!
+ the yummiest and easiest icing ever!

CAKE RECIPE:
INGREDIENTS: 
  • 1 cup plant milk
  • 1 tbsp apple cider vinegar
  • 2 cup flours (I used Bob’s Red Mill) 
  • 3/4 cup maple syrup or sweetener of choice 
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 1/2 cup nut butter - peanut or almond works great. 
  • 2/3 cup apple sauce
  • 1 tbsp vanilla extract
  • 1 cup boiling water


DIRECTIONS: 
  1. Preheat oven to 350F and grease or line two 9 inch cake pans (or use whatever you have like I did!) 
  2. Add your milk and ACV and let sit for a few minutes to curdle and create butter milk! 
  3. In a large bowl, mix dry ingredients: flour, cocoa powder, baking powder, baking soda and salt and whisk together. 
  4. Add nut butter, apple sauce, vanilla and buttermilk mixture.. mix all of this well.
  5. Slowly pour in boiling water a little at a time while mixing in between. 
  6. Divide the batter into the two baking pans and bake for 30-35 minutes (depending on thickness / shape of cake pans) .. over cooking will cause a more crumbly cake. 
  7. After they cool completely, carefully remove the cakes and icing (recipe below!) 
  8. Let the cake set on the counter or in the fridge until the icing hardens up a little (it will be runny at first!) 


FROSTING RECIPE:
INGREDIENTS: 
  • 3/4 cup coconut cream
  • 1 cup vegan chocolate chips

INSTRUCTIONS:
  1. Place can of coconut cream in fridge for several hours or the night before to make sure the liquid and the cream separate well. 
  2. You can probably use a microwave but I used a makeshift double boiler so as not to burn or curdle anything. 
  3. Scoop out 3/4 cup of the cream into the pot and let that start to melt a bit.
  4. Add in chocolate chips and stir occasionally until smooth.
  5. Remove and set in the fridge for 20 min or until it thickens and isn’t as runny (or it will be a mess!!) 
  6. You can also optionally whip this up with an electric mixer/hand mixer to form a fluffier buttercream like frosting!

Which type of Bob's Red Mill flour did you use?

I began baking the cake in the oven, and was wondering why the batter was so bitter. I never put the maple syrup in! A sweetener/syrup is listed in the ingredients, but not in the directions. Stella, please add the sweetener/syrup to the directions!
