easy protein bars

This recipe uses clean and whole protein sources (no fillers or refined crap!) and all ingredients that you most likely already have on hand.

These are easy, cheap and delicious for any time of day!
Ingredients:
  • 1.5 cups oats (rolled, quick or oat flour - the bigger the grain the less compact it will turn out! All are amazing but I used quick oats in these)
  • 1/2 cup single ingredient organic hemp protein powder (best protein ever and healthiest - you can use hemp hearts as well!)
  • 1 cup coconut flour (or almond flour or more oats)
  • 1/2 cup peanut butter (almond or tahini work too!)
  • 1/3 cup maple syrup
  • 2 flax eggs - 1 egg = 2 tbsp flax + 5 tbsp water
  • 2 tsp vanilla
  • 1 tsp baking powder
  • Add ins: chocolate chips, dried fruit, nuts, seeds, cinnamon, cacao or cocoa etc. 


Directions:
  1. Preheat oven to 350F and grease/parchment paper a 9x9 baking dish.
  2. Combine all ingredients in one big bowl and mix well.
  3. Transfer to baking dish and press firmly into pan (use parchment paper between surface and hands if batter is sticking to your hands.)
  4. Bake for roughly 15 minutes.
  5. Optional: sprinkle chocolate chips on at around 14 minutes and bake for another minute - remove and spread chips with back of a spoon to evenly coat the top! 
  6. Let them cool completely before cutting them up!
  7. Store in an airtight container for up to 5 days.

What are these?

2 flax eggs - 1 egg = 2 tbsp flax + 5 tbsp water

As in 2 tbsp flax seeds and one egg?

Hello Maxine Spalding!

This means you are using 2Tbsp Flax meal and adding the amount of water to it to create an "egg" in the recipe.
If you are vegan, you would substitute a regular egg for this tincture (or you may have heard of a chia egg) as a egg (from a chicken) replacement.
So no, you would be using all Flax to make your egg.

Can I use two eggs instead of the flax seed formula. I know it’s a vegan recipe, but I’m out of flaxseed and have eggs.
